Fusing healthy eating with fast food was on Charles Le’s mind when he came up with the idea for his new restaurant, Spring Roll Express.
Le, along with co-owner April Tran, opened the business, located at 1513 South U.S. 69 in Nederland, on Jan. 31.
The colorful rolls, made with transparent rice paper, are filled with vegetables such as lettuce, carrots, cucumbers, bell peppers and bean sprouts as well as noodles. Some rolls feature avocado while others have either grilled or boiled shrimp, pork, chicken, crawfish, crab or calamari.
Le got the idea for the restaurant after visiting numerous American-style fast food restaurants, some of which offered the typical fried foods while others, such as Subway, offered a healthy alternative, he said. He realized when he and his family visited Vietnamese restaurants, a lot of customers would order egg rolls or spring rolls as appetizers. He immediately dismissed egg rolls as they are a fried food and went straight to planning a restaurant based on spring rolls.
