Cheese please; Groves Library hosts cheese making class

GROVES —  Melanie Smith kneaded a soft white ball of cheese back and forth between her hands periodically testing the texture.

The cheese was well on its way to becoming mozzarella.

“This is very interesting,” Smith, vice-president of the Friends of Groves Public Library, said. “I think once I get home and look through all of the instructions, I can make cheese at home,”

Valerie Jensen, director of Chambers County Library System, presented The Art of Making Cheese class as part of Groves Library’s Adult Life Enrichment Series on Wednesday.

A table set at one end of the room held various cheeses made by Jensen including cheddar, red wine and brandy soft cheese as well as a light colored stilman cheese with cranberries.

Participants were spread out among tables where they worked with their starter kits; Jensen at one end with a plug-in table top stove and a pot where she heated milk to the perfect temperature for the project.

Diane Davis enjoyed her first attempt at making cheese.

“I love it and thought it was very interesting and apparently it’s easy to make cheese at home that’s as good as the stores,” Davis said.

The next class in the series will be a two part class titled Making Coiled Basketry to be held from noon to 1 p.m. Thursday, May 8 and Friday, May 9. The class requires a $5 donation for material costs. Only 10-12 students will be scheduled. The class will be taught by retired art teacher Christie Dubuisson.
